Ingredients
- 1 3/4 cups dry-curd cottage cheese
- 2 egg yolks
- 3/4 teaspoon salt
- 2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 3/4 cup cold water
- 2 tablespoons vegetable oil
Instructions
1
Combine cottage cheese, egg yolks, and a moderate amount of salt in a medium-sized bowl; temporarily store it aside.
2
Mix flour, the remaining 1 teaspoon of salt, and baking powder together in a separate bowl. Gradually add cold water and oil; blend into a smooth, cohesive dough.
3
Roll the dough out on a lightly dusted surface; cut into 3-inch circles using a glass, can, or cookie cutter. Place a small amount of cottage cheese filling onto each circle. Fold in half and press the edges together to seal them tightly.
4
Place a large pot of salted water on the stovetop and bring it to a rolling boil. Gently drop pierogies into the boiling water; cook until they rise to the surface, approximately 3-4 minutes. Remove them from the water with a slotted spoon; position them on a cooling rack set over a baking sheet to allow excess moisture to escape.
