  • 3 eggs
  • 1/2 cup cottage cheese
  • 1/4 cup milk
  • 1 cup chopped cooked broccoli
  • 1/2 cup shredded Colby-Monterey Jack cheese
  • 1/4 cup chopped red bell pepper
  • 1/2 teaspoon garlic salt
  • 1/8 teaspoon freshly ground black pepper

First, preheat your oven to a medium-high temperature of 350 degrees Fahrenheit or 175 degrees Celsius.

Next, take some cooking spray and lightly coat the interior of a large 6-cup muffin tin. This will prevent your quiches from sticking to the tin.

Then, combine eggs, cottage cheese, and milk in a food processor or blender. Mix the ingredients together on the lowest speed setting for about 1 to 5 seconds, until they are fully incorporated.

After that, transfer the mixture to a medium-sized mixing bowl.

Add some frozen broccoli, shredded Colby-Jack cheese, and diced bell pepper to the bowl. Sprinkle some garlic salt and black pepper over the top of the mixture, and stir everything together.

Now, divide the quiche mixture evenly among the prepared muffin cups. Make sure each cup is filled to the top.
