Costa Rican Rice and Beans
Ingredients
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 1/2 cup chopped celery
  • 4 cloves garlic, chopped
  • 2 cups black beans, rinsed and drained
  • salt and ground black pepper to taste
  • 3 cups cooked white rice

Preheat the cooking vessel by heating oil over a moderate flame. Introduce the onion, bell pepper, celery, and garlic into the pan and cook until they become tender, taking approximately 5 to 7 minutes. Combine the black beans with their natural liquids, salt, and pepper, then continue to cook until some of the liquid has evaporated, a duration of 3 to 5 minutes. Add the rice and cover the pan. Allow it to cook, undisturbed, until the vegetables are tender and the flavors have blended together, approximately 15 minutes.
