Ingredients
- 1 (5 1/2 pound) corned beef brisket
- 2 tablespoons pickling spice
- 1 large orange, sliced in rounds
- 1 large onion, sliced
- 2 stalks celery, sliced
- 1/2 cup cold water
- 6 tablespoons margarine, divided
- 1 large head cabbage, cored and sliced
- 1 cup Golden Delicious apples, cored and quartered with peel

Preheat your oven to 300 degrees Fahrenheit (that's equivalent to 150 degrees Celsius). To make things easier, cover the bottom and sides of a 9x13-inch roasting pan with aluminum foil, leaving some extra material on the edges so you can fold it over and seal in your roast.

Next, give the brisket a good rinse under cold water and gently pat it dry with paper towels. Then, sprinkle some pickling spice all over the roast to give it a nice flavor boost. Place the brisket in the prepared roasting pan and surround it with slices of orange, onion, and celery for added flavor.

Pour 1/2 cup of water into the pan, then cover the roast with a tight layer of aluminum foil, making sure to seal those edges tightly so nothing escapes.

Pop the roast into the preheated oven and let it cook until it's tender, which should take around 4 hours.

About 45 minutes before the roast is done, heat up the remaining 1/4 cup of water and 3 tablespoons of margarine in a large pot over low heat. Add some cabbage and apples to the pot, cover it, and let them simmer for about 30 minutes. Stir occasionally so nothing sticks to the bottom of the pot.

Finally, top your cabbage and apples with a bit more margarine and serve it alongside the delicious corned beef.
