  • 1 (15 ounce) can HORMEL® Mary Kitchen® Corned Beef Hash
  • 1/4 cup finely diced onion
  • 1/4 cup finely diced green bell pepper
  • 4 large eggs
  • 2 tablespoons canned diced tomatoes and green chiles
  • 1/4 cup shredded sharp Cheddar cheese
  • salt and pepper to taste

Combine the ingredients of corned beef hash, onion, and bell pepper in a heat-resistant pan. Cook over high heat, stirring periodically, until the vegetables start to soften and the hash starts to darken in color, taking around 10-15 minutes. Create four small depressions in the hash to hold the eggs. Take the pan off the heat source.

Position the oven rack about 6 inches away from the heat element and preheat the broiler. Gently place an egg into each depression, followed by a layer of chopped tomatoes.

Place the pan under the broiler; cook until the eggs are cooked to your desired level of doneness, taking 4-10 minutes. Monitor closely to prevent the eggs from burning. Remove the pan from the oven and top it with shredded cheese, sprinkling some salt and pepper on top.
