Corn Tomalito Pudding
Ingredients
  • 2 cups frozen whole-kernel corn, thawed
  • 1/2 cup water
  • 1/2 cup cornmeal
  • 1/3 cup white sugar
  • 5 tablespoons margarine, softened
  • 1/4 cup masa harina
  • 4 teaspoons milk
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
Instructions
1
Combine 1 cup of corn kernels with water and cornmeal in a blender or food processor until you achieve a smooth consistency.
2
Combine sugar, margarine, and masa harina in a medium-sized bowl and mix until the mixture becomes light and airy. Gradually incorporate the blended corn mixture into this combination, followed by the remaining 1 cup of corn, milk, baking powder, and salt. Mix until everything is well combined.
3
Carefully pour the corn mixture into the top of a double boiler, with simmering water below, and cover it tightly with aluminum foil. Steam the mixture until it becomes firm, taking around 50 to 60 minutes, and check on the water level periodically to refill if necessary.
4
Before serving, gently stir the pudding to ensure it has a consistent texture. Serve the pudding in small portions.
