  • 1 1/2 pints cherry tomatoes, halved lengthwise
  • 1 bunch green onions, diced
  • 2 tablespoons minced fresh cilantro
  • 2 tablespoons olive oil
  • 2 tablespoons aged white wine vinegar
  • salt and ground black pepper to taste
  • 1 (4 ounce) package feta cheese, cubed

Fill a large pot with water and place it on the stovetop over high heat, bringing the water to a rolling boil.

Then, carefully add the corn kernels to the boiling water and cook for 10 minutes, or until they are tender.

Next, remove the pot from the heat and carefully pour off the boiling water into a sink or drain.

Allow the corn to cool slightly under the gentle flow of running water, until it is no longer steaming hot.

In a separate large bowl, carefully remove the corn kernels from their cobs and discard the cob.

Then, add the diced tomatoes, chopped green onions, chopped cilantro, olive oil, vinegar, salt, and pepper to the bowl with the corn kernels.
