  • 3/4 cup water
  • 1/2 teaspoon kosher salt, divided
  • 1 tablespoon unsalted butter
  • 1/4 cup corn kernels
  • 2 tablespoons shredded whole-milk mozzarella cheese
  • 1/2 teaspoon sugar
  • 1 tablespoon Japanese mayonnaise (such as Kewpie®)
  • freshly cracked black pepper
  • 1 tablespoon whole milk, or more as needed
  • 1 scallion (dark part only), thinly sliced

Acquire all necessary components.

Place the 12-ounce microwave-safe container in your kitchen, and then fill it with the grits, water, and a pinch of kosher salt. Combine these ingredients using a fork or whisk, and position the container on a microwave-safe tray to prevent spills. Microwave on high for 1 ½ minutes, and then carefully remove the container.

Add a tablespoon of unsalted butter to the grits, and stir. Microwave for an additional 1 ½ to 2 minutes, or until the grits have reached a tender consistency. If desired, add extra seasoning to taste.

In a small bowl, blend together the corn, mozzarella cheese, sugar, Kewpie mayonnaise, and a small amount of kosher salt. Add as much freshly cracked black pepper as you prefer.

Carefully remove the cooked grits from the microwave, and then stir in a tablespoon of whole milk. If the mixture remains too thick for your liking, gradually add more milk in small increments until it reaches your desired consistency.

Pour the corn cheese mixture on top of the grits, and then microwave for 45 seconds without stirring. The cheese should now be completely melted.
