- 1 (16 ounce) package penne pasta
- 4 tablespoons salted butter
- 1 large onion, chopped
- 1 green bell pepper - stemmed, seeded, and finely chopped
- 1 (8 ounce) package sliced fresh mushrooms
- 3 cloves garlic, minced
- 2 (8 ounce) packages processed cheese food (such as Velveeta®), cubed
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 (10 ounce) can diced tomatoes and green chiles (such as RO*TEL®), undrained
- 1 (4 ounce) can mild chopped green chile peppers
- 4 cups cooked chicken, cut into bite-sized pieces

Preheat your oven to the desired temperature of 350 degrees F (175 degrees C).

Next, take a 9x13-inch casserole dish and give it a light coating of cooking spray.

In order to cook the pasta, fill a large pot with salted water and bring it to a rolling boil.

Once the pasta is boiling, add penne to the pot and return it to a boil. Continue cooking the pasta uncovered, stirring occasionally, until it reaches your desired level of tenderness yet still retains a bit of firmness to the bite, which should take approximately 11 minutes; then drain the pasta.

While your pasta is cooking, melt butter in a large skillet over medium heat.

Add sliced onion and bell pepper to the skillet, then cook, stirring occasionally, until they become tender, about 5 minutes.

Next, add sliced mushrooms to the skillet and cook until they release their liquid, about 5 minutes.

Add minced garlic to the skillet and cook, stirring occasionally, until fragrant, about 1 minute.

Melt cheese in the skillet by stirring it in and then cook until it's fully incorporated, about 5 to 10 minutes.

Add diced tomatoes with juice, diced tomatoes and green chiles with juice, and chopped chile peppers to the skillet. Continue cooking and stirring until the cheese is fully melted.

Once the cheese has melted, remove the skillet from heat and stir in cooked pasta and diced chicken.

Then, pour the entire mixture into a prepared 9x13-inch casserole dish.

Finally, bake the dish in your preheated oven until it's heated through and warm to serve.
