Ingredients
- 2 cups potatoes, cubed
- 2 cups cooked ham, cubed
- 1 (15.25 ounce) can whole kernel corn, drained
- 1/4 cup finely minced fresh parsley
- 1/4 cup butter
- 1 tablespoon chopped onions
- 1/3 cup all-purpose flour
- 1 3/4 cups milk
- 1/8 teaspoon ground black pepper
- 4 ounces processed cheese food, shredded
Instructions
1
Heat your oven to the temperature of 350 degrees Fahrenheit (or 175 degrees Celsius, if you prefer). \nNext, take a moment to lubricate an 11x7-inch baking dish with some non-stick spray or butter. This will ensure that your baked goods release easily once they're cooked.\nNow, fill a large container with water and add some salt to it. Place the container over high heat until the water reaches a rolling boil. \nAt this point, cook diced potatoes in the boiling water until they're tender yet still hold their shape. This should take around 15 minutes, depending on the size of your potatoes.\nOnce the potatoes are cooked, drain them and let them cool down a bit. This will make them easier to handle when you're mixing everything together.\nIn a separate bowl, combine the cooked potatoes with diced ham, frozen corn kernels, and some chopped parsley. Mix everything together until it's well combined.\nIn a large saucepan, melt some butter over medium-high heat. Add sliced onions to the pan and sauté them in the hot butter for about 2 minutes. \nNext, add a tablespoon of flour to the pan and stir it in until it's fully incorporated. \nNow, slowly pour in some milk while continuously stirring the mixture with a spoon or whisk. Add a pinch of pepper to taste, and bring the entire mixture to a boil.\nContinue cooking and stirring the mixture for another 2 minutes. This will help thicken it up a bit.\nPour the sauce over the ham mixture, and stir until everything is well combined. \nTransfer the entire mixture to the prepared baking dish.\nCover the dish with some aluminum foil and bake it in the preheated oven for 25 minutes. \nAfter 25 minutes, remove the foil and sprinkle some shredded cheese over the top of the dish. \nContinue baking until the cheese is melted and bubbly, which should take anywhere from 5 to 10 minutes more.
