Ingredients
- 1 (49.5 fluid ounce) can chicken broth
- 1 bunch green onions, chopped
- 1/3 cup cold water
- 3 tablespoons cornstarch
- 2 tablespoons soy sauce
- 1/4 teaspoon white sugar
- 3 eggs
- 2 tablespoons cold water
Instructions
1
Heat chicken broth in a large pot over high heat, stirring occasionally to prevent scorching; add chopped green onions to the pot and stir gently.
2
To make a thickening agent, combine 1/3 cup of cold water, cornstarch, soy sauce, and sugar in a bowl and whisk until the mixture is smooth and free of lumps; gradually add this mixture to the hot broth.
3
To prevent lumps from forming, bring the combined broth and thickening agent to a rolling boil; once boiling, reduce heat to low and let simmer for 1 minute.
4
In a separate bowl, whisk together eggs and the remaining 2 tablespoons of cold water until well combined; using a fork, slowly pour this egg mixture into the hot broth, stirring constantly to avoid scrambling the eggs.
5
Once the eggs are fully incorporated, remove the pot from the heat source and serve immediately.
