Colombian Fried Plantains
Ingredients
  • 1/2 cup oil for frying
  • 1 ripe plantain, peeled and cut into 1-inch rounds
  • 1 pinch salt

Position a serving platter in an inverted orientation on your work surface.

Heat oil in a large frying pan over medium heat. Sear sliced plantains in the hot oil until they develop a light golden color, 2 to 3 minutes per side. Utilize a slotted spoon to transfer the plantain slices onto the inturned platter, retaining the oil within the frying pan. Place a second serving platter, with its surface facing upwards, onto the plantain slices. Gently press down on the top platter to flatten and mash the plantains.

Add the flattened plantains to the hot oil and cook until they achieve a rich brown color, 2 to 3 minutes per side. Transfer the fried plantains to a paper towel-lined serving dish and sprinkle salt over them.
