Ingredients
- 2 cups all-purpose flour
- 2 tablespoons instant coffee powder
- 1/2 teaspoon salt
- 1/4 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1/2 cup packed brown sugar
- 1/2 cup white sugar
- 1/3 cup shortening
- 1 large egg
- 1 tablespoon milk
- 1 1/2 teaspoons vanilla extract

Preheat your oven to a high temperature of 400 degrees Fahrenheit (or 205 degrees Celsius, if you prefer metric).

Cover your baking sheets with a layer of parchment paper to prevent sticking.

In a separate bowl, mix together the flour, coffee powder, salt, baking soda, and baking powder until well combined.

In a large bowl, combine the brown sugar, white sugar, shortening, egg, milk, and vanilla extract.

Using an electric mixer, beat the mixture until it becomes light and fluffy.

Gradually add the flour mixture to the wet ingredients, blending until everything is thoroughly incorporated.

Shape the dough into small balls, about 1 inch in diameter, and place them on the prepared baking sheets with plenty of space between each cookie.

Use a fork to flatten the balls into thin, uniform disks.

Bake the cookies in the preheated oven for 8 to 10 minutes, switching the racks halfway through the cooking time.

The cookies are done when they're lightly browned.

Remove the cookies from the oven and transfer them to wire racks to cool completely.
