Ingredients
- 1 cup chopped pitted dates
- 1 teaspoon baking soda
- 1 cup strong brewed coffee
- 2 tablespoons butter, softened
- 1 cup white sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon salt
- 1 cup chopped pecans
Instructions
1
Preheat your oven to the desired temperature of 350 degrees Fahrenheit, or equivalently 175 degrees Celsius.
2
Next, take a moment to prepare your baking vessel by greasing an 8x4-inch loaf pan and lining the bottom with parchment paper for easy removal.
3
In a small bowl, combine dates and baking soda; the mixture will start to release its natural sweetness.
4
Bring coffee to a boil and pour it over the date mixture, allowing the flavors to meld together.
5
Set the coffee-date mixture aside for a few moments, waiting for it to come to room temperature.
6
In a separate bowl, cream together butter and sugar until they are well incorporated.
7
Mix in an egg to create a smooth, creamy texture.
8
Add a hint of vanilla flavor to the mixture and blend until well combined.
9
Mix in flour and salt, creating a foundation for your cake batter.
10
Fold in some chopped pecans to add texture and flavor.
11
Transfer the cake batter to your prepared loaf pan, making sure it's evenly distributed.
12
Bake for 1 hour in the preheated oven, or until the top of the loaf springs back when lightly touched.
13
Allow the cake to stand for 5 minutes before removing it from the pan, making it easier to handle.
14
Carefully peel off the parchment paper and transfer the cake to a wire rack for further cooling.
