Coffee Almond Chocolate Cookies
Ingredients
  • 3/4 cup blanched slivered almonds
  • 1/3 cup instant coffee granules
  • 2 tablespoons hot water
  • 2 2/3 cups all-purpose flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/4 cups white sugar
  • 1/2 cup butter, softened
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 cups semi-sweet chocolate chips
Instructions
1
Preheat your oven to the desired temperature of 350 degrees Fahrenheit, or equivalently 175 degrees Celsius.
2
To toast almonds in a single layer on a baking sheet, place them in the preheated oven and wait until they turn brown, approximately 10 minutes.
3
In a small bowl, combine 2 tablespoons of hot water with coffee to create a liquid solution; set it aside for later use.
4
In another bowl, whisk together flour, baking soda, and salt to create a dry mixture; set it aside.
5
In a large bowl, use an electric mixer to beat sugar and butter at a medium speed until they become light and fluffy.
6
Add coffee, eggs, and vanilla extract to the butter mixture and mix until well combined.
7
Reduce the mixer's speed to low and gradually add the dry flour mixture to the butter mixture, mixing until just combined.
8
Mix in chocolate chips and toasted almonds into the dough to create a cohesive mixture.
9
Scoop out small portions of the dough, approximately 1 teaspoon each, and place them 3 inches apart on an ungreased cookie sheet.
10
Place the cookie sheet in the preheated oven and bake for 10 minutes.
