- 1 (28 ounce) can tomato puree
- 3 tomatoes, chopped
- 2 carrot, sliced
- 2 strips celery, sliced
- 2 cloves garlic, minced
- water
- 3 tablespoons fresh lemon juice
- 6 (3 ounce) fillets cod
- 1 teaspoon white sugar
Instructions

Combine a generous amount of parsley, pimento, salt, pepper, tomato sauce, and fresh tomatoes in a large saucepan. Heat the mixture over high heat until it reaches a rolling boil.

Add carrots, celery and garlic to the saucepan and continue cooking until the carrots are tender but still retain some of their crunchiness.

Stir in a small amount of water and the juice of one lemon to add moisture and brightness to the dish.

Carefully place the fish into the saucepan without stirring or disturbing its surroundings.

Baste the fish with the liquid from the saucepan, making sure it's well-coated.
