- 4 pounds sweet potatoes, peeled and cubed
- 1 tablespoon salted butter
- 1/4 cup chopped leeks
- 2 (14 ounce) cans coconut milk
- 1 cup chicken stock
- 1 pinch ground black pepper
- 1 pinch cayenne pepper

Heat a pan over medium-high heat, and melt butter within it. Introduce leeks into the pan and cook them in the hot butter until they become soft and pale, taking around 5 to 7 minutes. Add diced sweet potatoes into the pan and cook them for another 3 to 5 minutes, stirring occasionally. Pour in a can of coconut milk and stir in some chicken stock, ground black pepper, and cayenne pepper. Allow the mixture to simmer gently, stirring occasionally, until the sweet potatoes are tender and easily pierced with a fork, approximately 30 minutes.

Combine the soup using an immersion blender; serve.
