- 5 pounds fresh mussels, scrubbed and debearded
- 2 cups chopped fresh cilantro

Combine coconut milk, freshly squeezed lime juice, dry white wine, spicy curry paste, minced garlic, fish sauce, and granulated sugar in a large cooking vessel. Whisk to fully incorporate sugar and curry paste; heat until mixture reaches boiling point. Allow the mixture to simmer for 2 minutes, then introduce mussels into the pot. Cover and cook, stirring periodically, until the mussels have opened, typically within 5 to 8 minutes.

Take the pot off the heat source and discard any unopened mussels. Transfer the mussels and their accompanying liquid into a serving container, then garnish with chopped cilantro.
