Coconut Milk Rice Pudding

  • 3 cups water
  • 1 1/2 cups basmati rice
  • 3 cups coconut milk
  • 1 1/2 cups raw sugar
  • 1/2 teaspoon sea salt
  • 1 cup whole milk
  • 2 eggs, beaten
  • 1/4 cup unsalted butter
  • 1 tablespoon vanilla extract
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 (15 ounce) can sliced peaches, drained and chopped
  • 1 cup raisins, or more to taste

Heat water in a saucepan over high heat, adding rice to the pot. Bring the mixture to a rolling boil, then lower the heat to a moderate level and cover the pan with a lid. Allow the rice to become tender and absorb all the liquid, taking around 20 minutes.

In a large saucepan, combine rice, coconut milk, sugar, and salt. Place the pan over high heat and bring the mixture to a boil once again. Once boiling, reduce the heat to a low level and let it simmer until the pudding has thickened and turned creamy, taking around 18-20 minutes.

Meanwhile, in a separate bowl, whisk together milk and eggs until well combined. Stir this mixture into the pudding constantly to prevent it from sticking to the sides of the pan, taking at least 2 minutes.

Remove the pudding from the heat source and thoroughly mix in butter, vanilla, cinnamon, and nutmeg until everything is fully incorporated. Using a gentle folding motion, combine peaches and raisins into the pudding mixture.
