- 1 onion, sliced
- 5 fresh curry leaves
- 1 serrano peppers, thinly sliced
- 1 clove garlic, crushed
- 1 tablespoon curry powder
- 1/2 teaspoon fenugreek seeds
- 1/4 teaspoon ground turmeric
- salt to taste
- 1 pound fresh green beans, trimmed
- 1/2 cup coconut milk
- 2 tablespoons lime juice

Preheat a saucepan over medium-high heat, allowing oil to warm up.

Add sliced onion, curry leaves, serrano peppers, and minced garlic into the hot oil and cook continuously until the onion turns a golden brown color.

Introduce curry powder, fenugreek seeds, turmeric, and salt into the saucepan and stir well; continue cooking for an additional 3 minutes.

Add green beans to the mixture, ensuring they are evenly coated with the flavorful sauce.

Gradually decrease the heat to a lower setting and cook until the green beans reach a tender-crisp state.

Pour in coconut milk, allowing it to simmer for at least 5 minutes before serving.
