  • 1 cup uncooked jasmine rice
  • 3/4 cup water
  • 3/4 cup light coconut milk
  • 1 teaspoon white sugar
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon grated lime zest
  • 1/8 teaspoon ground white pepper
  • 1/4 cup shredded unsweetened coconut, toasted

Heat a saucepan over medium heat and melt butter until it's fully incorporated. Introduce the aromatics - ginger, garlic, and a cinnamon stick - into the saucepan; cook until these ingredients release their fragrance, approximately 1 minute. Combine the rice with the saucepan's contents; continue cooking until the individual grains of rice become translucent, roughly 2 minutes. Introduce water, coconut milk, sugar, salt, lime zest, and white pepper into the saucepan; bring the mixture to a gentle boil. Stir once, cover the saucepan, and lower the heat to a low setting; let it simmer for 15 minutes.

After the rice has finished cooking, use a fork to gently separate its grains. Cover the saucepan once more and let it rest for 5 minutes, allowing the flavors to meld together. Finally, garnish your dish with toasted coconut flakes.
