Ingredients
- 1/2 cup dried lentils
- 1 cup water
- 3/4 cup canned cream of coconut
- 1 tablespoon curry paste
- salt to taste

First, thoroughly wash the lentils and combine them with water in a saucepan.

Bring the mixture to a rolling boil, then cover it and gently heat it over low heat for 15 minutes. Periodically stir the mixture to prevent scorching.

Add the curry paste, coconut cream, and a pinch of salt to taste. Continue stirring until well combined.

Return the saucepan to a gentle simmer, and continue cooking for an additional 10-15 minutes, or until the lentils are tender and have absorbed the flavors.
