Combine yeast and 1 cup of warm water in a large bowl, stirring until the yeast is fully incorporated. Add 1/4 cup of sugar to the mixture and stir well.

Next, combine salt and 5 cups of warm water in a separate large bowl. Stir until the salt is fully dissolved, then add shortening and remaining 1/4 cup of sugar.

Once the yeast mixture has started to foam, gently fold in the salt mixture until well combined.

Gradually add 1/2 of the flour to the dough, mixing thoroughly. Then, add the remaining 2 cups of flour in two portions, beating well after each addition to ensure a smooth dough.

Once the dough has come together and formed a cohesive ball, turn it out onto a lightly floured surface. Knead the dough until it becomes smooth and elastic.

To prevent sticking, lightly oil a large bowl. Place the dough inside the bowl and coat it evenly with oil. Cover the bowl with a damp cloth to create a warm, humid environment.

Allow the dough to rise in this environment until it has doubled in volume, approximately 1 hour.

Divide the dough into around 30-40 equal portions. Place each portion onto a lightly greased baking sheet.

Cover the rolls with a damp cloth and allow them to rise until they have doubled in volume again, roughly 40 minutes.

While the rolls are rising, preheat your oven to 350 degrees F (175 degrees C).
