Classic Yellow Rice
Ingredients

  • 3 large shallots, chopped
  • 2 cups uncooked jasmine rice, rinsed and drained
  • 1 tablespoon chopped garlic
  • 1 teaspoon salt
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cumin
  • 2 bay leaves
  • 3 1/2 cups low-sodium chicken broth

Melt butter in a substantial, thick saucepan over an intermediate heat setting. Introduce shallots into the pan; cook and stir until they become tender and lose their opacity, approximately 3 minutes. Introduce rice, garlic, salt, turmeric, coriander, cumin, and bay leaves into the saucepan. Continue to cook and stir for another 3 minutes. Add chicken broth and bring the mixture to a rolling boil. Decrease heat to a low setting, cover the saucepan, and cook until the broth is fully absorbed and the rice becomes tender, taking around 20 to 25 minutes.

Take the saucepan off the heat source. Discard the bay leaves and transfer the cooked rice to a serving container
