  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1 cup British beer
  • 1 1/2 cups heavy cream
  • 4 cups shredded sharp Cheddar cheese
  • 4 egg yolks
  • 8 slices bread

Heat butter in a large saucepan over low heat, stirring occasionally until melted. Combine flour and butter to form a smooth paste, taking care not to allow the mixture to darken in color. Gradually incorporate Worcestershire sauce, mustard, salt, and pepper into the mixture, blending until it reaches a uniform consistency.

Combine beer with the sauce mixture and whisk until well combined. Introduce heavy cream into the mixture, blending continuously until smooth. Gradually add Cheddar cheese to the sauce, stirring constantly and patiently until it has fully melted and blended in with the rest of the mixture.

Set the sauce aside to cool, allowing it to relax for approximately 5 minutes.
