- 2 teaspoons capers, drained
- 2 tablespoons mayonnaise, or more to taste
- 1 teaspoon Asian chile paste (such as sambal oelek)
- 1/3 cup fresh mozzarella cheese
- salt and ground black pepper to taste
- 2 tablespoons softened butter, divided
- 2 thick slices French bread
- 1/4 cup shredded sharp white Cheddar cheese, divided
- 1 pinch cayenne pepper, or to taste

Begin by placing the tuna into a mixing bowl and gently disentangling it with a fork to break apart its lumps. Next, add the chopped celery, green onion, capers, mayonnaise, and spicy chile paste to the bowl. Then, incorporate small pieces of mozzarella cheese into the mixture and stir until everything is well combined.

Now, add a pinch of salt and black pepper to the tuna mixture and refrigerate it until you're ready to serve. This will allow the flavors to meld together.

Preheat your oven's broiler and line a baking sheet with aluminum foil. This will help prevent any mess from spreading during cooking.

Spread butter evenly on both sides of the French bread slices. This will give them a rich, golden flavor when toasted.

Place the buttered bread under the broiler and toast it until it's golden brown on top, about 2 to 3 minutes. Flip the bread slices over and toast the other side until it's toasted, another 2 to 3 minutes. Remove from the oven and flip the bread slices over on the baking sheet so that the darkest sides are facing downwards.
