Classic Thai Green Curry
Ingredients
  • 2 (8 ounce) cans bamboo shoots, drained and thinly sliced
  • 3 tablespoons corn oil
  • 3 tablespoons green curry paste, or more to taste
  • 1 pound lean boneless pork, cut into 1/2-inch cubes
  • 2 (14 ounce) cans coconut milk
  • 1 small red bell pepper, thinly sliced
  • 1 tablespoon white sugar
  • 1/2 teaspoon salt
  • 8 makrut lime leaves, thinly sliced
  • 2 teaspoons fish sauce, or more to taste
  • 1/2 cup Thai basil

Boil a substantial container of water until it reaches its maximum temperature, then cook bamboo shoots for five minutes. Drain the liquid.

Heat a generous amount of oil in a large cooking vessel over medium heat, and cook curry paste until it emits a distinctive aroma, approximately two minutes. Add pork, increase the heat level, and cook until the meat begins to develop a golden color, three to five minutes. Add bamboo shoots, coconut milk, and red bell pepper.

Decrease the heat level and bring the mixture to a gentle simmer. Add sugar and salt to taste; continue to cook for ten minutes. Stir in lime leaves. Cook for an additional minute. Add fish sauce and stir in Thai basil before serving.
