- 1/2 green bell pepper, chopped
- 2/3 cup quick cooking oats
- 1/2 cup milk
- 2 large eggs, lightly beaten
- 2 cloves garlic, minced
- 2 teaspoons prepared mustard
- 2 teaspoons Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon seasoned salt
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon hot pepper sauce (such as Tabasco®)
- 1 pound ground beef
- 1/2 pound ground pork
- 1/2 pound ground veal

Create a glaze by blending ketchup, brown sugar, and cider vinegar in a bowl until they are perfectly merged.

Prepare the meatloaf by heating your oven to 350 degrees F (175 degrees C). Coat two 9x5-inch loaf pans with cooking spray or line them with aluminum foil to make cleanup easier.

Combine an onion and a bell pepper in a microwave-safe container. Cover it and heat until they are soft, taking about 1 to 2 minutes. Let them cool down afterwards.

Mix together oats, milk, eggs, garlic, mustard, Worcestershire sauce, thyme, seasoned salt, black pepper, and hot sauce in a large bowl until everything is well combined. Add the cooked onion and bell pepper to the mix, then stir in ground beef, pork, and veal. Use your hands to blend all the ingredients together until they are perfectly uniform.

Fill each prepared loaf pan with half of the meatloaf mixture. Brush 1/4 of the glaze over each loaf and set the remaining glaze aside.

Bake the loaves in the preheated oven for 50 minutes. Remove them from the oven and carefully pour off any excess fat. Brush the remaining glaze over the loaves, then return them to the oven for an additional 10 minutes. Use a thermometer to check if the center of each loaf has reached at least 160 degrees F (70 degrees C).

Let the loaves rest for 15 minutes before slicing them.
