Fry the chicken until it develops a rich brown color, 2 to 3 minutes per side. Decrease the heat to low-medium, cover, and cook for a considerable amount of time, 25 minutes. Uncover the lid and raise the heat to high; continue cooking until the chicken reaches a deep golden brown color and its juices flow freely, approximately 5 additional minutes. Verify the chicken's doneness by inserting an instant-read thermometer close to the bone, which should register 165 degrees F (74 degrees C).
