  • 4 small potatoes, peeled and coarsely chopped
  • 1 cup all-purpose flour
  • 2 eggs, beaten
  • 1/2 teaspoon baking powder
  • 1 pinch salt
  • 2 cups shredded Wisconsin brick cheese

Begin by cooking the bacon in a large skillet over medium-high heat, flipping it periodically until it's uniformly browned, approximately 10 minutes. Remove the cooked bacon from the skillet and place it on paper towels to drain excess moisture.

Next, use a food processor to grind the potatoes into a smooth consistency, taking about 2-3 minutes. Transfer the ground potatoes to a bowl and mix in flour, eggs, baking powder, and salt until you have a cohesive dough. Set the dough aside for now.

Fill a large pot with about half a gallon of salted water and bring it to a boil. Using a spoon, drop small portions of the dough into a cutting board and cut them into bite-sized pieces as you go. Once you've prepared all the dough, drop each piece into the boiling water. Allow the dumplings to cook over medium heat until they float to the surface, taking around 2-3 minutes. Remove the cooked dumplings with a slotted spoon and transfer them to a large serving dish.

Sprinkle a generous amount of crumbled bacon over each batch of dumplings, and then add a handful of shredded brick cheese. Continue making the dumplings by boiling them in batches, sprinkling each batch with bacon and brick cheese. Once all the dumplings are prepared, gently stir them together to combine all the ingredients.
