Classic Shrimp Etouffee
Ingredients
  • 4 pounds fresh shrimp, peeled and deveined
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon crushed red pepper flakes
  • 1 cup margarine, divided
  • 2 cups minced onion
  • 3 cups sliced celery
  • 3 cups diced green bell pepper
  • 2 tablespoons cornstarch
  • 3 1/2 cups water
Instructions
1
Combine the shrimp, salt, pepper, and a pinch of heat in a large bowl. Thoroughly mix until the ingredients are well combined. Cover and refrigerate for later use.
2
Next, heat a generous amount of margarine in a large pot over medium heat. Add the sliced onions and sauté until they become transparent, revealing their natural sweetness.
3
Add the diced celery and sliced bell pepper to the pot. Boost the heat to high and stir occasionally for 20 minutes, allowing the vegetables to release their flavors. Introduce the remaining margarine and bring the mixture to a rolling boil.
4
Fold in the previously chilled shrimp and adjust the heat to medium, cooking for 10 minutes or until the seafood is cooked through.
5
In a separate bowl, whisk together the cornstarch and water to create a smooth paste. Gradually pour this mixture into the pot, just covering the top of the shrimp and vegetables. Continue to cook on medium/high heat until the celery is tender, approximately 20 minutes.
6
Season with additional salt, pepper, and a touch of heat to taste.
