Classic Rhubarb Pie

  • 4 cups chopped fresh rhubarb
  • 1 egg
  • 1 1/2 cups white sugar
  • 1 cup sour cream
  • 1/3 cup all-purpose flour
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/4 cup butter, melted

Heat the oven to its highest temperature setting, which is 450 degrees F (220 degrees C).

Place the pie crust into a circular baking dish measuring 9 inches in diameter. Cover the entire surface of the crust with an even layer of rhubarb.

In a separate bowl, combine egg, white sugar, sour cream, and 1/3 cup of flour. Whisk the mixture until it becomes smooth and free of lumps. Pour this mixture over the rhubarb layer in the pie crust.

In another bowl, mix together 1/2 cup of flour and brown sugar. Add the melted butter to this mixture, stirring until it forms a crumbly texture. Sprinkle this topping evenly over the rhubarb layer.

Place the pie in the preheated oven and bake for 15 minutes. After this initial baking time, reduce the heat to its next lower setting, which is 350 degrees F (175 degrees C). Continue baking until the edges of the pie have puffed up and the topping is golden brown, approximately 40 minutes. The center of the pie may still be slightly jiggly when it's done. Allow the pie to cool completely before slicing and serving.
