Next, transfer the soaked pinto beans to a large saucepan and cover them with water. Add sliced onions, minced garlic, salt, and pepper to the saucepan as well. Bring the mixture to a rolling boil before reducing the heat to medium-low and letting it simmer for 1-2 hours, or until the beans are tender. If necessary, add more water to the pan periodically to prevent it from burning.

Using a potato masher or your hands, mash the cooked pinto beans into a smooth consistency. Then, stir in melted butter until it's fully incorporated. Continue cooking the mixture over low heat, stirring occasionally, until it reaches a thickened consistency and the butter is fully absorbed. Taste and adjust the seasoning as needed.

Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Transfer the bean mixture to a 9x13 inch baking dish and sprinkle shredded cheese evenly over the top. Place the dish in the oven and bake for 15 minutes, or until the cheese is melted and bubbly.
