  • 1 cup heavy whipping cream
  • 1 cup sour cream
  • 2 cups demerara sugar
  • 2 tablespoons all-purpose flour
  • 2 tablespoons pumpkin pie spice
  • 1 teaspoon salt
  • 2 (9 inch) unbaked deep dish pie crusts

Preheat your oven to a moderate temperature of 325 degrees Fahrenheit (165 degrees Celsius). To make the baking process more efficient, line a baking sheet with aluminum foil and lightly grease it with oil.

Place the pumpkin halves on the prepared baking sheet, with their cut sides facing downwards. This will allow for even cooking and prevent any mess.

Allow the pumpkin halves to cook in your preheated oven for approximately 40 minutes, or until they are tender throughout. Once cooked, set the pumpkin aside to cool down enough to handle.

Next, increase your oven's temperature to a higher level of 425 degrees Fahrenheit (220 degrees Celsius).

Carefully remove the pumpkin flesh from the baking sheet and transfer it to a large mixing bowl. Combine the pumpkin flesh with eggs, heavy cream, sour cream, demerara sugar, flour, pumpkin pie spice, and salt in the bowl. Mix everything together until you achieve a smooth consistency.
