Classic Lebanese Fattoush Salad
Ingredients
  • 1/2 cup water
  • 1 teaspoon cornstarch
  • 1/3 cup lemon juice
  • 2 cloves garlic, minced
  • 2 teaspoons sumac powder
  • salt and ground black pepper to taste
  • 1 head romaine lettuce, torn into bite-size pieces
  • 2 large tomatoes, diced
  • 1 green bell pepper, seeded and chopped
  • 1 medium cucumber, diced
  • 1 cup chopped purslane
  • 4 green onions, chopped
  • 1/2 (5 ounce) package arugula
  • 1/4 cup chopped fresh flat-leaf parsley
  • 1/4 cup chopped fresh mint
  • 4 pita rounds, toasted and torn into pieces

Prepare the sauce: Combine water and cornstarch in a small cooking vessel over high heat, stirring constantly until it reaches a thick consistency. Take the saucepan off the heat source and blend in lemon juice, minced garlic, sumac, salt, and pepper. Allow it to chill in the refrigerator until you're prepared to use it.

Prepare the salad base: Mix together lettuce, tomatoes, bell pepper, cucumber, purslane, green onions, arugula, parsley, and mint in a large serving container. Toss the salad with the prepared sauce and serve alongside toasted pita bread.
