Ingredients
- 1 cup yellow cornmeal
- 2 tablespoons whole wheat flour
- 1/2 teaspoon salt
- 1 tablespoon white sugar
- 1 teaspoon baking powder
- 1 1/2 tablespoons shortening, melted
- 1 cup boiling milk
- 1 egg, separated
Instructions
1
Preheat your oven to the desired temperature of 275 degrees Fahrenheit (or 135 degrees Celsius).
2
Next, lightly coat a 9x9 inch baking pan with a thin layer of cooking spray.
3
Sift together the cornmeal and flour, then spread the mixture evenly onto a baking sheet. Bake in your preheated oven until it reaches a light brown color, approximately 10 minutes. Allow the mixture to cool down.
4
To further prepare your oven, increase the temperature to 400 degrees Fahrenheit (or 200 degrees Celsius).
5
In a large mixing bowl, combine the cornmeal mixture with salt, sugar, and baking powder. Gradually add in shortening and milk; mix until the ingredients are well-blended.
6
In a separate, large bowl, whip an egg white until it becomes stiff and frothy. In another bowl, beat an egg yolk until it's smooth, then gently fold the egg yolk into the whipped egg white. Combine this mixture with the flour mixture, stirring gently to avoid overmixing.
7
Pour the prepared batter into your lightly greased baking pan. Bake in your preheated oven for 45 to 50 minutes, or until the top is golden brown and the desired consistency is achieved.
