SERVINGS

Ingredients
- 2 (5 ounce) cans tuna, drained
- 1/4 cup mayonnaise
- 1/4 cup finely chopped celery
- 1 1/2 tablespoons finely chopped onion
- 1 tablespoon chopped parsley
- 3/4 teaspoon red wine vinegar
- 1 pinch salt
- 1 pinch freshly ground black pepper
- 4 slices seedless rye bread
- 8 slices Swiss cheese
- 8 slices ripe tomato
- paprika, for garnish
Instructions
1
Position the oven rack approximately 6 inches away from the heat source and set the broiler to its highest temperature.
2
Combine canned tuna, mayonnaise, diced celery, sautéed onion, chopped parsley, and white vinegar in a mixing bowl; add a pinch of salt and black pepper to taste.
3
Place slices of bread on a baking sheet, then subject them to the broiler in the preheated oven for about 1 minute, or until they are lightly toasted. Remove the bread from the oven and keep the broiler on.
4
Divide the tuna salad mixture among the slices of bread, placing a slice of cheese on top of each serving. Layer each slice with two tomato slices and finish with another slice of cheese.
5
Place the assembled sandwiches under the broiler in the preheated oven for 3 to 5 minutes, or until the cheese is melted and bubbly.
