Combine cornstarch, sugar, and salt in a saucepan; blend the mixture with 1/2 cup coconut milk to create a uniform consistency. Combine the remaining 1 1/2 cups of coconut milk with the initial mixture, then heat over low heat, stirring continuously until a smooth paste forms. Continue to cook and stir the mixture until it reaches a thick, syrupy texture that coats the back of a spoon, approximately 5 minutes.

Pour the chilled pudding mixture into a 9x13-inch baking dish; allow it to chill in the refrigerator until it reaches a solid state.
