Ingredients
- 8 pounds ground pork
- 8 pounds ground beef
- 4 cups finely chopped onion
- 6 cups water
- 2 1/2 tablespoons salt
- 2 teaspoons pepper
- 2 teaspoons allspice
- 1 3/4 teaspoons ground cloves
- 1 teaspoon ground cinnamon
- 1/4 cup liquid chicken seasoning
- 8 (15 ounce) packages pastry for double-crust pie
Instructions
1
Preheat the oven to a high temperature of 400 degrees Fahrenheit (200 degrees Celsius).
2
Take a large cooking vessel and combine the pork, beef, onion, and water in it. Add salt, pepper, allspice, cloves, cinnamon, and chicken seasoning to the mixture for flavor. Bring the ingredients to a rolling boil.
3
Once boiling, decrease the heat to a low simmer and let it cook for 30 minutes. This will allow the flavors to meld together.
4
Carefully pour off the excess liquid from the pot into a separate container, leaving behind the remaining meat mixture. Place this in the refrigerator to chill until you're ready to use it.
5
In a separate container, place the liquid that was poured off earlier in the refrigerator. Allow it to chill for at least one hour, or until a layer of fat has solidified on its surface.
6
Scoop off the excess fat from the chilled liquid and transfer it to a separate container. Use this meat mixture to fill pie crusts.
7
Add 1 tablespoon of the reserved liquid from earlier to each pie, as this will help keep them moist during baking.
8
Place the top crust on each pie and press the edges together to seal it tightly. Make a few small holes in the top crust using a fork, allowing steam to escape during baking.
9
Place the pies in the preheated oven and bake until they're golden brown, approximately 50 minutes. Serve immediately or store them in the freezer for later use.
