Ingredients
- 6 egg yolks
- 6 tablespoons white sugar, divided
- 1/2 teaspoon vanilla extract
- 2 1/2 cups heavy cream
- 2 tablespoons brown sugar
Instructions
1
Preheat the oven to its highest temperature setting of 300 degrees F (a moderate heat, equivalent to 150 degrees C).
2
In a large mixing container, combine egg yolks, four tablespoons of granulated sugar, and a dash of vanilla extract. Use an electric whisk to blend the ingredients until they become smooth and velvety, then set them aside for a moment.
3
In a separate saucepan, pour in some heavy cream and gently heat it over low flames until it reaches a simmering temperature.
4
Using the same whisk, combine the cream with the egg yolk mixture and blend until everything is fully incorporated.
5
Carefully pour this new mixture into the top pan of a double boiler, which consists of two pans with a gap in between. Continue to stir the mixture over simmering water until it forms a thin, even layer on the back of a spoon, taking about three minutes to achieve this.
6
Transfer the mixture into a shallow, heat-resistant dish and place it in the preheated oven to bake until the custard is set, which should take around 30 minutes. Allow it to cool down to room temperature before refrigerating it for at least one hour or overnight.
7
Switch the oven to its broil setting and combine two tablespoons of granulated sugar with a small amount of brown sugar in a tiny bowl. Sprinkle the sugar mixture evenly over the custard.
8
Place the dish under the broiler and heat it until the sugar melts and caramelizes, which should take about two minutes. Keep a close eye on it to avoid burning.
9
Allow the dish to cool slightly, then refrigerate it again until the custard is fully set once more, which should take around 10 minutes.
