  • 3 large hard-boiled eggs, peeled and cut into chunks
  • 1 teaspoon chopped fresh chives for garnish
  • 1 pinch paprika for garnish
  • 1 1/4 cups mayonnaise, or more if needed
  • 3 tablespoons apple cider vinegar
  • 2 tablespoons Dijon mustard
  • 1 teaspoon kosher salt, plus more as needed
  • 1/2 teaspoon freshly ground black pepper
  • cayenne pepper to taste

Start by placing whole potatoes into a large pot, making sure they're fully submerged in 1/4 cup of kosher salt. Then cover the pot with cold water, bringing it to a boil over high heat. Once boiling, gradually reduce the heat to medium-low and let simmer for approximately 40 minutes, or until the potatoes are tender - this time can vary depending on their size.

Transfer the cooked potatoes to a plate and let them cool down to room temperature, allowing the heat to dissipate completely.

Once the potatoes have cooled down, carefully remove their skin and cut them into larger-than-bite-sized pieces. This is because the potato pieces will break down slightly when you mix them with the dressing.

Transfer these potato pieces to a large mixing bowl and add diced celery, chopped onions, parsley, and hard-boiled eggs. Combine all the ingredients together, breaking up any larger pieces of! with a spoon.
