- 8 ounces breakfast sausage links, casings removed and meat broken up
- 4 strips bacon, sliced crosswise
- 1/2 cup chopped green onions (light parts only)
- 1/3 cup packed all-purpose flour
- 2 1/2 cups cold milk
- 1 pinch cayenne pepper, or to taste
- salt and freshly ground black pepper to taste

Heat butter in a large cooking vessel over medium heat. Introduce sausage and bacon into the pan, then cook until the sausage is nicely browned and the bacon is almost crispy, taking around 10 minutes. Add a small amount of light green onion to the sausage mixture and cook until it's soft, adding another 3 minutes.

Gradually incorporate flour into the meat mixture, a tablespoon or two at a time, until it's fully combined and forms a smooth paste. Continue to stir the mixture constantly to eliminate any raw flour taste, taking around 2-3 minutes.

Slowly pour milk into the meat mixture, a cup at a time, until it's fully incorporated. Keep whisking until the gravy starts to thicken, which should take around 5 minutes. Increase the heat to medium-high and bring the gravy to a boil.

Season the gravy with cayenne pepper, salt, and black pepper. Reduce the heat to medium-low and continue to simmer the gravy, stirring occasionally, until all the flavors have blended together and it reaches a thick consistency, taking around 10-15 minutes.
