Classic Chinese Stir-Fry Vegetables
Ingredients
  • 2 cups uncooked brown rice
  • 4 cups water
  • 1 tablespoon safflower oil
  • 1/3 cup leeks, chopped
  • 2 cloves garlic
  • 1 teaspoon minced fresh ginger root
  • 1 cup zucchini, chopped
  • 1 cup carrots, chopped
  • 1 cup yellow squash, chopped
  • sea salt to taste

Combine the brown rice and water in a saucepan, then place it on the stovetop over high heat. Bring the mixture to a rolling boil, before gradually decreasing the intensity of the heat to medium-low. Cover the saucepan and allow it to simmer gently for 45-50 minutes, or until the rice is cooked through and all the liquid has been absorbed.

In a separate pan, heat the safflower oil over medium heat. Introduce the leeks, garlic, and ginger into the pan, stirring constantly until they have become tender. Next, add the zucchini, carrots, and yellow squash to the pan, stirring frequently until they have softened. Season with salt to taste.

Combine the cooked brown rice and vegetable mixture in a serving dish, then serve hot.
