  • 1/2 vanilla bean, split
  • 1 teaspoon unsalted butter
  • 4 cups cherries (with pits)
  • 1/2 cup all-purpose flour
  • 1 pinch salt
  • 1/2 cup white sugar
  • 3 eggs
  • 3 tablespoons heavy cream
  • 2 tablespoons white sugar

Combine milk and vanilla bean in a saucepan, allowing it to infuse for at least 1 hour.

Preheat the oven to a temperature of 350 degrees F (175 degrees C). Grease an 8-inch baking dish with a generous amount of butter. Arrange the cherries in a single layer at the bottom of the prepared baking dish.

In a separate bowl, whisk together 1/2 cup of flour, 1/2 cup of sugar and a pinch of salt. Gradually add eggs one at a time, blending with an electric mixer after each addition until the mixture is smooth and velvety.

Carefully remove the vanilla bean from the milk, discarding it. Add the milk to the egg mixture and blend until well combined. Pour in heavy cream, mixing until the mixture is silky smooth. Pour this mixture evenly over the cherries.

Transfer the clafoutis to the preheated oven and bake until the top is golden, taking 45 to 50 minutes. Remove from the oven and sprinkle a generous amount of sugar on top. Allow it to cool slightly before serving, ensuring the clafoutis is set. Serve warm or at room temperature.
