Classic Brunswick Stew
Ingredients
  • 4 ounces diced salt pork
  • 2 pounds chicken parts
  • 8 cups water
  • 3 potatoes, cubed
  • 3 onions, chopped
  • 1 (28 ounce) can whole peeled tomatoes, chopped
  • 2 cups canned whole kernel corn
  • 1 (10 ounce) package frozen lima beans
  • 1 tablespoon Worcestershire sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Combine the salt pork, chicken, and water in a large pot over high heat. Bring the mixture to a rolling boil, then decrease the intensity of the heat to low and cover the pot. Allow it to gently simmer for 45 minutes, or until the chicken is tender and falls apart easily.

Once the chicken has cooled sufficiently to handle, remove it from the pot and set it aside. Carefully pull the meat away from the skin and bones, then discard the skin and bones.

Shred or chop the chicken into bite-sized pieces and return it to the pot. Add the potatoes, onions, tomatoes, corn, lima beans, and Worcestershire sauce to the pot. Stir everything together thoroughly before continuing to simmer, uncovered, for 1 hour.
