Classic Beef Stroganoff with Mushrooms

  • 3 tablespoons all-purpose flour
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon ground black pepper
  • 1 pound beef tenderloin
  • 1/4 cup butter
  • 1/2 cup water
  • 1/2 cup chopped onion
  • 1 clove garlic, cut in half
  • 1 pound mushrooms
  • 1 (10.75 ounce) can condensed cream of chicken soup
  • 1 cup sour cream

Combine the flour, salt, and pepper in a bowl and blend them together. Use your hands or a spoon to mash the mixture into the beef, making sure it's evenly distributed. Cut the beef into 1/2-inch thick strips.

Heat butter in a saucepan over medium heat and let it melt. Add the beef to the pan and cook until it's nicely browned, taking about 10 minutes. Use a slotted spoon to remove the meat from the pan and transfer it to a covered container in the refrigerator. Meanwhile, prepare the gravy by making the sauce with water, onion, and garlic; cook these ingredients over medium heat in the same pan until all the browned bits have been scraped off, which should take about 5 minutes. Add sliced mushrooms and cream of mushroom soup to the pan; let them cook until the mushrooms are tender, which will take around 20 minutes.
