Classic Baba Ghanoush
Ingredients
  • 1 large eggplant
  • 4 cloves garlic, smashed
  • 1 1/2 tablespoons tahini sauce
  • 1/2 medium lemon, juiced
  • 1/2 teaspoon red pepper flakes
  • salt to taste
  • 1 tablespoon olive oil, or to taste
  • 1 pinch dried parsley flakes, for garnish

Preheat your oven to 400 degrees F (200 degrees C). Place a baking rack in the lower third of the oven and another one in the upper third.

Next, take an eggplant and make a shallow incision along its side, then place it in a baking dish.

Roast the eggplant on the lower rack of your preheated oven for approximately 40 minutes, or until it has shrunk and become very soft. After this time, move the eggplant to the upper rack of your oven and continue baking for an additional 5 minutes, or until its skin is nicely charred.

Once the eggplant has finished roasting, remove it from the oven and let it sit for 15 to 20 minutes, or until it has cooled enough to handle.

Now, carefully remove the skin from your roasted eggplant and place its tender flesh into a bowl.

Add some minced garlic, a spoonful of tahini, a squeeze of fresh lemon juice, a pinch of pepper flakes, and a sprinkle of salt to your eggplant mixture.

Mix everything together until it is well combined, creating a delicious and flavorful eggplant dish.

Finally, drizzle some olive oil over the top of your eggplant mixture and garnish it with a sprinkle of fresh parsley.
