Combine butter, sugar, and almond extract in a large bowl using an electric mixer until the mixture reaches a light and fluffy consistency. Gradually incorporate flour into the mixture using a wooden spoon until it forms a smooth, cohesive mass. Divide this dough into two equal portions and cover them with plastic wrap before refrigerating for 2 hours.

Next, preheat your oven to a moderate temperature of 300 degrees F (150 degrees C). To prepare the work surface, lightly dust it with white sugar before rolling out one portion of dough to a thickness of approximately 1/2 inch. Use a round cookie cutter with a diameter of 1 ½ inches to cut out cookies, which you should then place on an ungreased cookie sheet with about 1 inch of space between each cookie.

Using the end of a wooden spoon, create an indentation in the center of each cookie. Then, bake these cookies in your preheated oven for 25 to 30 minutes, or until they are lightly golden brown around the edges.
