- 1 (12 fluid ounce) can or bottle dark beer
- 1 (8 ounce) bottle clam juice
- 1 (28 ounce) can crushed roma tomatoes
- 3 tablespoons chopped fresh oregano
- 1 pinch salt and pepper to taste

Begin by submerging the clams in a substantial amount of water within a large container. Introduce cornmeal into the mixture and allow it to sit for approximately 20 minutes. Thoroughly clean the clams before proceeding with cooking.

Next, heat the olive oil and minced garlic in a large pot over medium heat. Wait until the garlic becomes aromatic, then add the chourico, onion, and paprika-like spice. Cook for 2 or 3 minutes, followed by the addition of roughly three-quarters of the beer. Permit the mixture to simmer for a few additional minutes, then introduce the clam juice, tomatoes, and rinsed clams.

Cover the pot and continue to simmer until all clams have opened. Season with oregano, salt, and pepper before serving the dish. Dispose of or consume the remaining beer.
