Ingredients
- 1 tablespoon butter, melted
- 5 tablespoons white sugar, divided
- 5 teaspoons butter
- 5 teaspoons all-purpose flour
- 1/4 cup cold milk
- 1 tablespoon brandy-based orange liqueur (such as Grand Marnier®)
- 1 teaspoon freshly grated orange zest
- 2 large egg yolks
- 1/8 teaspoon vanilla extract
- 2 large egg whites
Instructions
1
Preheat your oven to the high heat setting of 400 degrees Fahrenheit; adjust the temperature gauge accordingly.
2
Next, prepare your baking vessels by gently rubbing them with 1 tablespoon of melted butter; sprinkle a pinch of sugar onto the surfaces. Place these vessels on a baking sheet lined with aluminum foil for easy cleanup.
3
Melt 5 teaspoons of butter in a saucepan over the medium-low heat setting; cook and stir the flour until it turns golden brown and has a pleasant aroma, approximately 2 minutes.
4
Pour in milk and cook, stirring constantly, until the mixture becomes smooth and thick, taking around 3 to 4 minutes.
5
Transfer this mixture to a large bowl and stir in the orange liqueur and its grated zest. Add egg yolks and vanilla extract; mix until everything is well combined.
6
In a separate large bowl, whisk the egg whites until they become frothy. Gradually add 2 tablespoons of sugar and continue to whisk until the mixture comes together smoothly.
7
Add an additional 2 tablespoons of sugar and keep whisking until the meringue holds its shape and has a thick but not stiff texture.
8
Fold 1/2 of the meringue into the egg yolk mixture until it's fully incorporated. Gently fold in the remaining meringue until everything is well mixed.
9
Transfer this mixture to your prepared baking vessels, leaving a small gap of 1/4-inch at the top for expansion during baking.
10
Bake in your preheated oven until it's risen and has a golden brown color, approximately 16 minutes.
